We are PJ and Tara Head, a husband and wife team known as Koop’s barbecue. Both of us are from Galveston, Texas. One born and one raised. We love our community and are proud to serve them!
We met 12 years ago in a little bar in clear Lake Texas. We found that we shared a passion of food and cooking for our family and friends. After creating a “cook off” team of our own and actually WINNING trophies over the years, we thought maybe it was time to try our hand at a little restaurant on wheels.
We married in August 2015 and opened our own nonprofit organization together. We saved up for a food truck, put together a delicious menu and headed to Galveston County for some permits. Our name “Koop’s” is derived from our sister and best friend named Kristen Head. She loved cooking and being a part of any cook team event. She was one heck of a cook and as we all did, she learned it from her mama! She tragically lost her life and is no longer with us. Kristen’s nickname was Pook, we decided to name our food truck after her, Koop is Pook backwards.
We hope to be open daily, but for now, we are focusing on catering and private events. We specialize in barbecue but we can accommodate anyone’s pallet. We have a variety of delicious menu items perfect for any occasion. We are very proud of our product and the name we stand behind.
Our food is cooked with love and a little bit of ALL of our personalities. We make everything fresh and from scratch!
